Well, I actually think my Nana would like these waffles a lot! They have just a hint of cinnamon and fresh ground nutmeg and a splash of brandy to start the morning off right! And they are ridiculously easy.

People claim that to get the lightest, fluffiest waffles you need to fold in egg whites beaten to stiff peaks and blah, blah, blah. No offense but I did none of that and these waffles were superb! No whipping, no beating. No unwanted early morning exercise.

Why am I posting a Lazy Sunday Buttermilk Waffle recipe on a Saturday? I have not lost my calendar; it’s so that you can make them tomorrow! In the event that Easter crept up on you and you don’t have an elaborate brunch planned, I’ve got you covered! Everyone will be satisfied and no one will wonder where the overnight French toast was.

I’m so considerate!

Lazy Sunday Buttermilk Waffles

These waffles are fluffy but not so airy you wonder if you ate a Krispy Kreme donut instead of a waffle. The spices and brandy give it a hint of flavor that makes you want to reach for another piece!

Total: 30 minutes
Servings: 10 waffles

Ingredients 
 

Instructions 

  • Preheat your waffle iron. Mine is completely non-stick so I don’t need to spray it with Pam or brush it with oil, but if you do, then make sure you have that ready!
  • Whisk together flour, salt, sugar, soda, cinnamon, and nutmeg in a large bowl and set aside.
  • Stir together buttermilk, eggs, butter, vanilla, and brandy in a medium bowl until well combined. Pour wet mixture into the dry mixture and stir with a wooden spoon until no lumps remain. If your batter is too thick, you can loosen it with some buttermilk as needed. It will thicken as it sits, so feel free to add more as you go along. The batter should be thick enough to slowly pour off the spoon but not so thick that it clumps. Be careful when adding extra buttermilk because you don’t want it to be too runny!
  • Pour approximately ½ cup of batter into each Belgium waffle square or follow the manufacture instructions for your particular waffle iron. Close the lid, wait 3-5 minutes depending on your iron and your desired level of doneness. {You can always peek after 2 minutes. My Dad did this and he is the waffle master…so there’s that}
  • Serve immediately or you can keep them warm in a slow oven or warming drawer.

  2. Looks yum! I wish I could enjoy leisurely Sundays too. Lazy Sunday mornings are the best. Hope you had a nice Easter. Did you do a lot of cooking/baking? I had a crazy busy weekend at the restaurant. Yikes! Lol I had waffles yesterday at work, but they were bleh. I am sure they tasted better when fresh and hot, but they were cold and meh by the time I got to ’em.

    1. I don’t always get to enjoy lazy Sunday mornings but when I do, I’m grateful! I baked more than I would care to admit this past weekend. Hubs is out of town, so that’s what I do in my spare time 🙂 Cold or reheated waffles are the worst! Hope your Easter was good except the extra work!
