Pumpkin Spice Bread

Ingredients

  • 226 g Light brown sugar (1 cup packed)
  • 460 g Sugar (2 cups)
  • 200 g Vegetable Oil (1 cup)
  • 4 ea Eggs
  • 16 oz Pumpkin puree (1 can)
  • 375 g All purpose flour (3 cups)
  • 10 g baking soda (2 teaspoons)
  • 7 g baking powder (1 teaspoon)
  • 6 g Kosher Salt (1 ½ teaspoons)
  • 1 T Cinnamon
  • 1 ½ t Ginger
  • ½ t Mace
  • ½ t Cloves
  • ½ t Allspice
  • 100 g Water (½ cup)
  • Sugar for coating pans

Instructions

  1. Preheat oven to 350°F. Spray two 9” x 5” loaf pans and coat with granulated sugar.
  2. Combine flour, spices, baking powder, baking soda and salt. Whisk to incorporate, set aside.
  3. Whisk together light brown sugar, sugar, oil, and eggs. Whisk in puree.
  4. Whisk dry ingredients and water into sugar mixture.

Notes

Note: Makes 2 loaves, which uses an entire can of pumpkin. Can also make one loaf and you can use the extra pumpkin puree in this healthier loaf or these muffins or be bold and make pumpkin spice donuts!!
