I’ve been eating this Grapefruit, Kale, Chicken and Avocado Power Salad everyday for over a week, so I figured if I love it so much, I should share it with you! It’s filling and flavorful!
It’s packed full of healthy fats from the avocado, walnuts and olive oil; a simple grilled rosemary chicken provides even more protein to power you through the day; baby spinach and kale, which have too many health benefits to fit here (if you want to read more about the power of kale, you can here); and a tiny sprinkling of goat’s milk feta, because EVERYTHING is better with cheese.
The Champagne Vinaigrette perfectly ties all the flavors together but doesn’t overpower them – just as an excellent salad dressing should be. I am obsessed with this dressing. It is also an excellent sauce in which to bake fish!
I first used it as a dressing for a simple salad to go with my baked Halibut and I just can’t get enough!
This Power Salad makes an easy yet filling lunch or dinner! It would also be a beautiful appetizer for company (scaled down, of course).

Grapefruit, Kale, Chicken and Avocado Power Salad with Champagne Vinaigrette
- Prep Time: 5 minutes
- Cook Time: 15 minutes
- Total Time: 20 minutes
- Yield: Serves 1 1x
Ingredients
- 1 cup baby kale
- 1 cup baby spinach
- 1 very small pink grapefruit
- ½ avocado, sliced
- ½ chicken breast, sliced
- ½ oz goat’s milk feta cheese
- Walnuts

Instructions
- Make your chicken breasts by your preferred method. I grilled these in a grill pan on my stovetop, but you can also pan sear them and then cook on the stove or in a preheated 400 ° oven or grill them in a real grill. Let rest 10 minutes prior to slicing. While the chicken cooks build your salad. I like to remove everything except the juicy insides of the grapefruit – it takes a bit longer but then there is no bitterness to offset their amazing flavor!
- While chicken is resting, make your salad dressing.
- Arrange all topping on your bed of spinach and kale, drizzle a bit of your salad dress on top. Enjoy!

It’s been so sunshiny, warm, and springlike here in socali. The salad would be great to pack for lunch too. I bet you make all your lunches to bring to work too, right? I can’t imagine you going across the street for Subway or whatever lol. I can SO see you putting thought and love into yours and your husbands lunch to take to work.

I would sometimes go out for Thai or Indian or BBQ (my fav!) with the other finance guys when I worked at GE, but not so much since then. 🙂 Have you seen how many ingredients are in a Subway sub? It’s insane…
The temperature varies by day! Some days it’s barely over freezing then the next day it’ll be 70! Isn’t it always sunny and springlike in Socali?
