This Power Salad is packed with healthy fats, protein and fresh fruits and vegetables! An easy champagne vinaigrette pulls it all together!
I’ve been eating this Grapefruit, Kale, Chicken and Avocado Power Salad everyday for over a week. I figured if I love it so much, I should share it with you! It’s filling and flavorful!
It’s packed full of healthy fats from the avocado, walnuts and olive oil; a simple grilled rosemary chicken provides even more protein to power you through the day; baby spinach and kale, which have too many health benefits to fit here (if you want to read more about the power of kale, you can here); and a tiny sprinkling of goat’s milk feta, because EVERYTHING is better with cheese.
The Champagne Vinaigrette perfectly ties all the flavors together but doesn’t overpower them – just as an excellent salad dressing should be. I am obsessed with this dressing. It is also an excellent sauce in which to bake fish!
I first used it as a dressing for a simple salad to go with my baked Halibut and I just can’t get enough!
