Juicing is having a moment in my house. And by a moment, I mean that we are drinking vitamin, mineral, and antioxidant-packed Kale Power Juice every day. I feel guilty for not sharing our fabulous new obsession with you earlier.

I did some research (ahem: a lot of research) on juicers and settled on a Hurom Slow Juicer, because, while it is more expensive than a centrifugal juicer, it retains more pulp and creates more juice.

We figured that to make long-term changes; we needed to make gradual changes to our diet. We started juicing, eating less meat, and cutting back (drastically) on sugar.

I’ve done quite a bit of experimenting, some tastier than others, and I’ve developed my standard “go-to” Kale Power Juice. It’s tasty but still packed full of low-calorie, nutrient-rich vegetables.

The majority of this juice is Kale, which is a nutrition powerhouse all on its own. It is an antioxidant; anti-inflammatory; a cell detoxifying agent; a major source of vitamin K (1,180% DV!), vitamin A, vitamin C, manganese, copper, vitamin B6, and more; a significant amount of Omega- 3 fatty acids; and cancer-preventing glucosinolates. Kale Power Juice

Kale Power Juice is a green juice packed with nutrient dense green veggies. A nutritious and delicious add to a juice cleanse or just a healthy lifestyle!!!

Ingredients  

  • 8 oz Lacinato / Tuscan Kale about 1 bunch
  • 4 oz Red Kale
  • 1 Collard Green Leaf
  • ¼ bunch parsley
  • 3 carrots
  • 2 apples I like 1 Fuji or Gala and 1 Pink Lady
  • 2 oranges
  • 2 lemons
  • 1 inch ginger root

Instructions 

  • If you are using a Slow Juicer then you will need to cut everything up into 1” pieces prior to feeding them into the juicer. Juice and enjoy!

Notes

I only juice organic vegetables. We don’t want to poison our body with the food that we are trying to use to detoxify and enrich it!

  2. The more advanced you become at preparing it you may want to add various types of cabbage, parsley, collard greens, dandelion greens, and mustard greens. These last items are quite bitter when taken by themselves, but in combination with fruits like cranberries, lemons, pear and apple are tolerable. Green juice is an excellent way to start your day, and to add nutrients that are omitted from many diets across the land.

  5. I want to try some. I can imagine feeling so much healthier afterwards.

    I binge watch too (not just when I’m sick in bed). I get really addicted to certain Korean dramas, especially twisted ones with adultery, revenge, betrayal..components of a good story. They make me so eager to find out what happens next and I cant stop watching sometimes. I get too soaked in.

    1. Lol! Don’t think I only binge watch shows when I’m sick! I have been known to watch entire seasons of Gossip Girl, Revenge (you’d prob like this one!), Downton Abby. I definitely did it more before marriage though!No man can tolerate that much British period drama!

  6. I need to follow your lead, but green smoothies scare me 🙂 I think I’ll start by adding some spinach…then maybe I can graduate to kale. I bet the carrots and ginger add great flavor and sweetness.
