I almost skipped the maceration step, but I’m so glad I didn’t. The filling was perfectly thick and flavorful, and pressing some topping into the apples made such a difference in texture! ⭐⭐⭐⭐⭐

Why This Is the Best Apple Crisp Recipe
- Generous topping ratio. No sad, topping-less servings here.
- Balanced sweetness. Tart apples and lemon keep the filling from being cloying.
- Deep flavor. Dark brown sugar adds richness.
- Texture contrast. Soft apples with crisp topping in every bite. It’s the kind of dessert that kids and adults both go back for seconds!
Table of Contents
I grew up making apple crisp like this—heavy on the topping and eaten straight from the dish while it was still too hot. It’s the same energy as my cinnamon apple pie and apple hand pies, just faster and more forgiving.

Ingredients & Substitutions

- Apples: Remove the peels so the apples bake evenly and stay tender. Use tart varieties like Granny Smith, Honeycrisp, or Pink Lady. You can also mix in Fuji or Braeburn apples for a slightly sweeter, more complex flavor. A mix gives better flavor and texture! This guide on types of apples is helpful if you want to experiment.
- Lemon juice & zest: Brightens the filling and balances sweetness.
- Cinnamon & nutmeg: You can swap in apple pie spice, pumpkin spice, or speculoos spice.
- Dark brown sugar: Adds moisture and deep molasses flavor.
- Rolled oats: Use old-fashioned oats for texture.
- Butter: Keep it cold so the topping forms chunks.
See the recipe card for full ingredient quantities.
Variations for Apple Crisp
- Add caramel: Drizzle salted caramel sauce over the top or bake some into the filling.
- Try other fruit: Use pears like in this pear upside down cake or follow my peach crisp recipe.
- Switch the topping: Use my brown sugar streusel instead of oats.
- Make minis: Portion into ramekins like my individual blueberry raspberry crumbles.

Professional Tips
- Cut all your apples to the same size. This is so they bake evenly and don’t turn into a mix of mush and undercooked pieces. I like ¾-inch chunks for the best texture.
- Use tart apples to balance the sweet topping If your apples taste sweet raw, add a little extra lemon juice.
- Press some of the topping into the apples. I do this so you get a soft, cookie-like layer underneath the crisp topping. This contrast is what makes it interesting.
How to Make Easy Apple Crisp Recipe
Use these instructions to make the perfect apple crisp every time.

Step 1: Mix apple filling. In a medium bowl, combine apples, lemon juice, zest, sugar, cinnamon, nutmeg, and salt. Stir until evenly coated (photo 1).
Step 2: Macerate apples. Cover and refrigerate for at least 1½ hours, stirring occasionally (photos 2 & 3).
Let the apples macerate in the sugar to pull out moisture and create a thicker, more cohesive filling. This step improves both flavor and texture.
Step 3: Preheat the oven. Set the oven to 350°F with a rack in the center.
Step 4: Make topping. Mix brown sugar, flour, and oats. Work in butter with your hands until crumbly with some chunks.
If the butter starts to feel like melted butter, stop and chill before continuing.
Step 5: Assemble crisp. Pour apples into an 8-inch dish, top with crumble, and press some into the apples (photo 4).
Step 6: Bake until bubbling. Bake for 45–50 minutes until golden and bubbling. Add 10–15 minutes for softer apples.

Step 7: Cool and serve. Let cool for 10 minutes, then serve warm with vanilla bean ice cream, french vanilla ice cream, or vanilla bean crème anglaise (photo 5).
Professional Chef Tip
In a simple dessert like this, ingredient quality matters. Use fresh apples, real butter, and fresh lemon zest.
Recipe FAQs
If your apple crisp isn’t crispy, the topping likely had warm butter or too much moisture. Use cold butter, don’t overmix, and bake until the topping is deeply golden brown. Moisture from the apples can soften the topping if it hasn’t baked long enough.
Yes, you can make this easy apple crisp recipe ahead. Bake it fully, cool completely, then refrigerate for up to 7 days or freeze for up to 2 months. Reheat in a 350°F oven until warmed through and crisp on top.
My favorite way to finish it is with a scoop of vanilla ice cream melting into the topping! You can also serve warm caramel or even apple butter.

OMG! This looks so delicious. I could see myself eating it without ice cream…only because I couldn’t wait that long to scoop it out.
Thanks! I see no reason to wait longer than 10 minutes before adding the ice cream! Impatient! The only thing that keeps me from diving in immediately, it knowing that I’ll burn my tongue if I do!
I am horrible at writing things down at times too – I love your take on the filling of this, Lindsey. The lemon juice, fresh lemon zest, and fresh nutmeg sound like a wonderful addition to crisp perfection!
Thanks, Shashi! I like at add a little extra acid to counterbalance all that brown sugar!
Looks so inviting. You are so right about the ice cream. I can’t imagine who or why anyone would eat it without the ice cream. Well, unless they are lactose intolerant or something. Otherwise, that’s just crazy. I love dishes that bring about fond memories. They’re so full of warmth and comfort.
For serious. I could eat this every week, but then I wouldn’t be a very good food blogger!
First off…who on earth would want a “normal” ratio of crisp!!! Crazies! That’s who! This looks utterly delicious and I love how you caught the ice cream melting in the photos. I’m trying this for the holidays for sure 🙂
