    Pumpkin Spice Oatmeal is the breakfast that I have been eating on repeat. It is filling and heartwarming and diet-friendly all at the same time.

    Who else decided to skip working on their Summer body this year? ??‍♀️ Ooops my bad!

    Allow me to fix that with a healthy Fall breakfast!

    This actually came about because I had an obnoxious amount of pumpkin puree left after making pumpkin bread a few weeks ago. It wasn’t enough to make a pie or anything really. I had long grown tired of my summer breakfast and craved something warm and comforting. Enter Pumpkin Spice Oatmeal!

    It is sooooo easy!

    Throw it all in a bowl, microwave and smile as the Fall smells of pumpkin spice oatmeal warm your soul. 

    I’ve even been making it ahead of time without the water and then bringing it to work! It’s like your own version of oatmeal packets. Man I miss those.

    This healthy pumpkin spice oatmeal is filling and diet-friendly all at the same time. It’s also a great way to use leftover pumpkin puree!

    Ingredients
     

    • ¾ cup Quick Oats
    • 1 ¼ cups Water
    • 2 Tablespoons Pumpkin puree
    • 1 teaspoon Pumpkin spice mix
    • 2 teaspoons Dark brown sugar packed (optional)
    US Customary - Metric

    Instructions
     

    • Combine everything in a bowl. Microwave 1.5-2 minutes, stirring halfway through. You can also make it on the stovetop if you only have rolled oats
    • Enjoy!

    Here is my recipe for Pumpkin Spice Mix.
    You can also combine everything except the water in a sealable container. Refrigerate until ready to use. Add water, microwave, and enjoy! This is how I have been bringing my breakfast to work 👩🏻‍🍳
