Pumpkin Spice Oatmeal is the breakfast that I have been eating on repeat. It is filling and heartwarming and diet-friendly all at the same time.
Who else decided to skip working on their Summer body this year? Ooops my bad! Allow me to fix that with this healthy Fall breakfast!
After making pumpkin bread a few weeks ago, I had an obnoxious amount of pumpkin puree left. It wasn’t enough to make my easy foolproof pumpkin pie, pumpkin coffee cake with streusel topping or even a small batch of brown butter pumpkin chocolate chip cookies! I craved something warm and comforting and healthy.
It is sooooo easy! Throw it all in a bowl, microwave and smile as the smells of pumpkin spice warm your soul. I’ve even been making it ahead of time without the water and then bringing it to work! It’s like your own version of oatmeal packets.
This recipe uses my pumpkin spice mix recipe. I love topping it with raisins, pecans or diced apples. I love mixing up my breakfast with this oatmeal and healthy pumpkin muffins. For a winter twist try my Gingerbread Oatmeal recipe which has all the flavors of gingerbread boys! Or make slow cooker porridge instead! You could also go all the way in the cookie direction and make some Old Fashioned Oatmeal Cookies!
Pumpkin Spice Oatmeal
Ingredients
- ¾ cup Quick Oats
- 1 ¼ cups Water
- 2 Tablespoons Pumpkin puree
- 1 teaspoon Pumpkin spice mix
- 2 teaspoons Dark brown sugar packed optional
Instructions
- Combine everything in a bowl. Microwave 1.5-2 minutes, stirring halfway through. You can also make it on the stovetop if you only have rolled oats
- Enjoy!
