    Strawberry Banana Spinach Smoothie

    My brother is visiting me in Atlanta this weekend! Yay!! Fingers crossed it doesn’t rain on us at the Braves game tonight. Fortunately for him (and me) I did get the aforementioned broken AC fixed yesterday…

    …Just in time for the polar vortex (huh?) to make its way to the South. Remember the last time we had a polar vortex?

    This easy recipe for a healthy Strawberry Banana Spinach Smoothie is fast, easy and delicious!!!

    So while it was still unbearably hot and I had no AC, I made a lot of smoothies (and these shrimp, obvi). My favorite was hands down this Strawberry Banana Spinach Smoothie! It’s so creamy with bold strawberry, banana and coconut flavors!

    There are no added sugars and a generous handful of spinach is hidden inside, so you can feel happy and healthy sipping on one of these sweet, healthy treats!

    Strawberry Banana Spinach Smoothie

    For me a smoothie is not really a smoothie without frozen banana. I love the creamy, cool texture it creates. It seems more like dessert than lunch! It also helps that I compulsively buy bananas.

    I cannot leave the grocery store without buying a bunch of bananas, which tends to lead to a hoard of overripe naners on my counter. What I cannot stuff into my tiny freezer is baked up into yummy treats like this Nutella Swirl Banana Bread, these Peanut Butter Stuffed Double Chocolate Banana Cupcakes, or these Double Chocolate Banana Muffins (one of the most popular recipes on the site, btw). Along with an omnipresent stash of frozen healthy Blueberry Banana Bran Muffins!

    Strawberry Banana Spinach Smoothie

    Back to my current favorite smoothie! I used plain Greek yogurt to give a slight tang to counterbalance the sweet strawberries and bananas. And my favorite part is the coconut milk! OBSESSED! It’s not overwhelmingly coconuty but there is a nice hint of a tropical vaca right there in your glass. Yumm.

    You are going to want to scrape out the glass with a spatula because you won’t want to waste even a drop!

    Ingredients
     

    • 5.6 oz can coconut milk (I buy mini cans that are this size)
    • ¼ cup 2% Greek Yogurt
    • 5 medium strawberries (hulled and sliced in half)
    • 1 large banana (frozen in slices)
    • 1 cup fresh spinach (or one large handful)
    US Customary - Metric

    Instructions
     

    • Place all ingredients in a blender or in the cup of a Nutribullet, which is what I use. Blend until smooth and homogeneous. Enjoy!

    Notes

    Yield: 1 Smoothie
    All measurements (except the coconut milk) are approximate because we’re making a smoothie not a soufflé. It doesn’t need to be perfect. Calories are calculated based on the above ingredients.

      I love smoothies. I feel the same way about bananas in my smoothie. I'm surprised you don't have a Nutella or Reeses smoothie on here. Or do you and I missed it? Hope you had fun with the bro. You have a good looking family! You, your mom, the bro (haven't seen pics of your dad, but I am sure he's handsome too) are all beautiful.

        That is surprising that I don't given my obsession with both! I try to keep me smoothies on the healthy side so that I can feel less guilting eating an extra helping of pie! 🙂 You are too sweet! I showed your IG comment to my brother...made him blush lol!

      I am always making smoothies with spinach, but I have yet to try them with coconut milk. I guess I need to do that soon! I love the pretty red flecks of strawberry in this!
