I made this the night before and stored it in the fridge, then crumbled it over my banana muffins right before baking. The crumbles stayed distinct and turned perfectly golden on top. I will never bake muffins or a banana bread without it again. ⭐⭐⭐⭐⭐

Why This Recipe Works

  • Soft, not melted butter. This streusel recipe uses soft butter rather than melted butter. The resulting streusel will be lighter, less floury, and more tender.
  • It is versatile. Bake it on its own to use as a topping for ice cream, puddings, and yogurt, or crumble it on pies, cakes, muffins, and quick breads!
  • It’s adaptable. In my professional chef life, this is my go-to streusel recipe. I have added spices, oats, peanut butter, and more to create a completely different experience.

You can make this easy streusel topping in one bowl, by hand or with a stand mixer! Use it baked as a crunchy topping for ice cream sundaes, puddings like this dark chocolate pudding, or custards like flan. Of course, it is excellent baked on top of muffins, cakes, tarts, and pies, or mini pies like these mini apple pies!

You can see a cinnamon version featured on this caramel apple tart! It is also crumble. You can bake crumble it over, and a peanut butter version on these peanut butter streusel muffins.

Ingredients & Substitutions

This streusel topping needs five pantry ingredients, plus cinnamon for the spiced variation shown.
  • Granulated Sugar and Light Brown Sugar: Together, these give the streusel its structure and flavor. The granulated sugar crisps as it bakes; the brown sugar contributes molasses depth and helps the clusters hold together.
  • Unsalted Butter: Room-temperature unsalted butter makes mixing easy and produces a more tender streusel.

See the recipe card for full information on ingredients and quantities.

Variations on This Brown Sugar Streusel

  • Spiced Streusel. Whisk your spice of choice directly into the dry ingredients before adding the butter. Cinnamon is the classic move, but pumpkin spice mix or apple pie spice work beautifully depending on what you are topping.
  • Nut Streusel. Add roughly chopped pecans, walnuts, or almonds to the mixture before working in the butter. The nuts toast as the streusel bakes and add a layer of crunch that makes it especially good on fruit-based recipes.
  • Oat Streusel. Swap out up to a quarter of the flour for old-fashioned rolled oats. This gives the topping a heartier, more textured finish, which I love on crisps and pies like this easy apple crisp recipe!
  • Almond Streusel: Substitute up to 1 cup of the flour for almond flour.

Professional Tips

  • Chill before baking. The 20 to 30 minutes in the refrigerator after crumbling is not optional. Cold clusters hold their shape in the oven; warm ones flatten and merge into a solid crust before the bake is even halfway through.
  • Watch for matte centers, not just color. At 350°F, the streusel bakes on its own for 8 to 12 minutes, but your crumbles change everything. A large cluster can look golden on the outside while the center is still raw and greasy. Pull it when the centers look dry and matte, not shiny.
  • Freeze a batch ahead. Unbaked streusel keeps in the freezer for up to two months. Crumble it straight from frozen over these jumbo blueberry muffins or any quick bread and bake as directed, adding a few extra minutes to the total bake time.

How to Make This Streusel Topping Recipe

This comes together in minutes, but chilling the crumbles before baking is what gives you those distinct, crunchy clusters instead of a melted, greasy mass. Find further details and measurements in the recipe card below.

Step 1: Combine the ingredients and mix until no flour remains. Add the granulated sugar, brown sugar, salt, and cubed butter to the bowl of a stand mixer fitted with the paddle attachment. Mix on medium-low until fully combined and clumping together. Look for no visible streaks of flour and a texture that holds together when you squeeze a handful. (photo 1 & 2)

If you are mixing by hand, combine everything in a bowl and squeeze it together or use a pastry blender with your hands until the mixture forms large, cohesive clumps with no dry flour at the bottom of the bowl, which is my preferred method for smaller batches because you get a better feel for the texture.

Everything for this streusel topping goes into one bowl before mixing begins.
Mix the streusel topping until it clumps together and no streaks of flour remain.

Step 2: Crumble onto a lined baking sheet and refrigerate. Break the mixture into crumbles of varying sizes over a parchment-lined baking sheet. Refrigerate for 20 to 30 minutes. This step is not optional: cold fat bakes into crisp, defined clusters, while warm fat spreads and turns greasy before it can set.

Step 3: Preheat the oven and bake until golden. Preheat your oven to 350°F while the streusel chills. Bake for 8 to 12 minutes; start checking at 8. The crumbles are done when they are golden brown, and the centers of the larger clusters look matte rather than shiny. Timing will vary quite a bit depending on how large you make your crumbles, which is completely normal. (photo 3)

Tip: If you are using the streusel unbaked on muffins or quick breads, skip Step 3 and crumble it over your batter before it goes into the oven.

Step 4: Apply streusel to unbaked goods and bake as directed. Crumble the chilled, unbaked streusel generously over the top of your muffins, quick bread batter, cake, or pie before it goes into the oven. Press it on just lightly enough to make contact with the batter, but don’t pack it down, or it will sink and lose its texture. Bake according to your recipe’s instructions, and expect the bake time to run a few minutes longer than usual if the original recipe did not include a streusel topping. (photo 4)

If your streusel looks pale when your recipe says to pull it, give it 3 to 5 more minutes uncovered. Pale streusel is underdone, and it will taste more like raw flour than a proper crunch.

Chilled before baking, this streusel topping holds its shape in crisp, golden, separate clusters.
Crumble the chilled streusel topping generously over a tart or pie before it bakes.

Step 5: Serve or store. Once baked, the streusel is ready to go as is. If you baked it separately on a sheet pan, let it cool completely on the pan before storing or crumbling it over finished cakes, ice cream, or yogurt. It will crisp up further as it cools, which I love because it means you get more crunch the next day than you had straight from the oven.

Chef Lindsey’s Recipe Tip

This is going to be controversial, but you can add too much streusel. For example, in muffins like these peach muffins, if you add too much streusel or too large of chunks, it will prevent the muffins from rising properly, and they will sink in the center.

Recipe FAQs

Can I make streusel topping ahead of time?

Yes, and it is one of the best things about this recipe. Store unbaked streusel in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months. Store baked streusel in an airtight container at room temperature for up to 2 weeks, though the flavor peaks in the first week.

Why is my streusel topping not crunchy?

The most common reason is that the butter was too warm before baking, causing the clusters to spread and melt instead of holding their shape. Refrigerate the crumbled streusel for the full 20 to 30 minutes before it goes into the oven. The second culprit is pulling it too early: the centers of the larger crumbles need to look matte, not shiny, before you call it done.

Can I add mix-ins to streusel topping?

Yes. Chopped nuts, old-fashioned rolled oats, and spices all work well folded into the dry ingredients before you add the butter. Keep the total volume of mix-ins moderate so the mixture still clumps properly.

Instructions

  • Combine the granulated sugar, light brown sugar, kosher salt, and cubed butter in the bowl of a stand mixer fitted with the paddle attachment. Add the flour and mix on medium low until the mixture comes together in large, shaggy clumps with no visible dry flour remaining.
  • Alternatively, combine all ingredients in a large bowl and squeeze everything together with your hands until the mixture clumps and no loose flour remains.
  • Turn the mixture out onto a parchment-lined baking sheet and crumble it into clusters of varied sizes. Refrigerate for 20 to 30 minutes.
  • To bake the streusel on its own, preheat the oven to 350°F conventional while the streusel chills. Bake for 8 to 12 minutes, until the crumbles are golden brown and the centers of the larger clusters look matte rather than shiny. Bake time will vary depending on crumble size.
  • To use unbaked, crumble the chilled streusel directly over the top of unbaked muffins, quick breads, cakes, or pies and bake as directed by the base recipe. Streusel can add several minutes to the total bake time if the original recipe did not include it.
